Rooster Rojo Tequila Blanco
Origin & Raw Material. Produced within the Tequila DO, in Jalisco – Los Altos, from 100% Blue Weber agave carefully selected from local growers. The altitude and red soils favor plants rich in sugars and with distinctive citrus and floral notes.
Process. The piñas are cooked in autoclaves (≈10 hours) to convert the sugars and develop the sweet nuances of agave without burning the fibers. This is followed by mechanical milling and extraction of the aguamiel, then controlled fermentation with sourdough. Double distillation results in a clean spirit; the final cut to bottling strength is made with local water filtered through silver, a refinement that gives the texture a smoother, silkier feel.
