Kidia equipment: functionality and aesthetics for the bartender
For the MEGODA we used two tools by Kidia, combining aesthetics and practicality:
- Kidia Infuse Store ‘n Pour: ideal for storing and pouring liquids like cordials, syrups, and pre-batches. The airtight cap preserves freshness, while the spout ensures precise and clean pouring even during service.
- Kidia Flower Edition: a professional mold that shapes the ice, giving it a delicate floral texture. It not only enhances the drink’s presentation but also reflects the attention to detail typical of contemporary mixology.
Preparation of the Green Melon and Lime Cordial
Ingredients (for about 700 ml):
- 500 g green melon pulp (ripe honeydew)
- 300 g granulated sugar
- 150 ml fresh lime juice
- Zest from 2 untreated limes
- 5 g citric acid (optional but recommended)
- 1 pinch of fine salt
Procedure:
- Prepare the melon: Clean the melon, removing peel, seeds, and fibers. Cut the pulp into cubes.
- Cold maceration: Combine the sugar, lime zest, and salt with the pulp. Place all the ingredients in a large container, mix well, and refrigerate for 12-24 hours.
- Extract the liquid: Strain through a fine sieve or cheesecloth and press the pulp thoroughly.
- Acidification and balancing: Add the fresh lime juice and, if desired, the citric acid. Adjust the taste as needed.
- Final filtration and bottling: Strain again for a clear product. Store in sterilized bottles in the refrigerator.
Storage: up to 3 weeks refrigerated.
Conclusion
MEGODA is an example of how a few carefully prepared ingredients can create a cocktail with a great aromatic impact. Perfect as an aperitif or paired with fresh, light dishes.
