Dominican Milk Punch: A Silky and Refined Cocktail

The Dominican Milk Punch is a cocktail that captivates with its richness and complexity of flavors, offering a unique silky sensory experience. Thanks to the milk washing technique, the result is a velvety and well-balanced drink, capable of surprising even the most refined palates.

What is Milk Washing and Brugal 1888

Milk washing is a technique that uses the coagulation of milk proteins to trap solid particles in suspension, making the cocktail clear and transparent. This process results in a cleaner drink, with a smooth texture and a round, harmonious flavor. In the Dominican Milk Punch, this technique is paired with Brugal 1888, a rum of extraordinary complexity obtained through a double maturation process. Aged for eight years in American white oak ex-bourbon barrels and an additional six years in European oak ex-sherry oloroso barrels, Brugal 1888 releases notes of red fruits, dried fruit, dates, and spices such as cinnamon. On the palate, it is round and smooth, with hints of vanilla, peach, cocoa, and cloves, finishing with a persistent touch of honey that leaves an elegant impression. Preparation for 3600 ml (40 Servings)

Ingredients:

  • 1000 ml sweet red vermouth
  • 1000 ml bitter
  • 1600 ml Brugal 1888 Rum
  • 100 ml chocolate bitter
  • 1800 ml milk
  • 54 g apple cider vinegar
  • 4 bananas
  • 12 vanilla pods

Instructions

Base Mixture Preparation

  • Mix Brugal 1888, sweet red vermouth, bitter, and chocolate bitter in a large container.
  • Cut the vanilla pods vertically and add them to the mixture.
  • Let it infuse for at least 24 hours so that the flavors blend perfectly.

Banana Preparation

  • After the infusion time, remove the vanilla pods.
  • Pour 900 ml of the mixture into a blender, add one banana, and blend until smooth. Repeat this process four times, using all the liquid.
  • Let the mixture rest for 4 hours.

Filtering

  • Strain the mix with a fine sieve to remove any solids.

Milk Preparation

  • Heat 1800 ml of milk to a temperature of 65-70°C.
  • Mix the hot milk with the mixture, ensuring they blend completely to achieve a smooth consistency.

Coagulation

  • Add 54 g of apple cider vinegar to the hot mixture.
  • Wait for the mixture to curdle. If it has not curdled after 10 minutes, add another 6 g of apple cider vinegar.

Final Filtering

  • Once the solids and liquids have separated, gently pour the mixture through a fine sieve for an initial filtration.
  • Then use paper filters (like coffee filters) or a super bag filter for finer filtration until a clear mixture is obtained.

Prepare and Serve Your Cocktail

Pour 90 ml of Dominican Milk Punch into a mixing glass filled with ice and stir slowly with a bar spoon to evenly chill the drink without over-diluting it.

  • Serving: Using a Kidia strainer, strain and pour the Dominican Milk Punch into an old-fashioned glass with a 5×5 cm ice cube.
  • Garnish: Garnish with a chocolate coin, a slice of dehydrated banana, or a carved banana leaf for an exotic and refined touch.

Equipment Used

  • Jigger Kidia 30/60 ml: Used to precisely measure all cocktail ingredients, ensuring the correct balance of flavors.
  • Large container: Essential for holding the 3600 ml alcoholic mixture and 1800 ml of added milk. Alternatively, multiple containers can be used, but it is crucial to maintain the correct proportion of ingredients to ensure a uniform result.
  • Blender: Indispensable for blending the banana and mixing the ingredients thoroughly to ensure a smooth texture.
  • Paper filters: Filters, such as coffee filters, or a super bag filter are ideal for fine filtration and achieving a clear cocktail.
  • Mixing glass, Bar Spoon, and Kidia Strainer: The mixing glass is used to chill the cocktail gently with the bar spoon, ensuring the drink reaches the ideal temperature without excessive dilution. The strainer is then used to filter the cocktail during service, preventing ice from ending up in the final glass.

Conclusion

The Dominican Milk Punch is a cocktail that combines the best of modern mixology, using the traditional milk washing technique along with distinctive flavors such as Brugal 1888 rum and chocolate bitter. The result is a silky and complex drink, perfect for those looking for something more in a cocktail. Serve it to impress your guests or to enjoy a moment of pure pleasure and sophistication.
